Because Mongoloid individuals are larger than Europeans, which reduces their susceptibility to decay due to their lower metabolism rate, they have a longer shelf life in the diet as compared to Europeans (Daly et al., 2000; Zhang and Zhao, 2002). A variety of factors contribute to tooth decay in Mongoloids, but a possible mechanism appears to be their diet. Mongoloid groups have a higher diet fiber content than other populations in Asia and South Asia. According to the Mongoloid diet, most Mongoloids consume relatively low-acid foods, such as nuts and fruits, with moderate intakes of refined grains and sugar (Liu, 1994; Liu et al., 1996). Mongoloids have a high intake of polysaccharide materials, including starches, such as casein, and the presence of lignans, such as cellulose, also helps prevent tooth wear (Friedrichs-Andersen et al., 1994). The Mongoloid diet is high in protein and high in fats, which help prevent tooth wear. The consumption of low-calorie sources of dietary fiber increases the shelf life of Mongoloid teeth by preventing the loss of food that is lost during tooth decay (Liu, 1994).
